Sweet Peachy Mango Smoothie

Maybe I’m getting ahead of the seasons, but winter winds have slowed to a stroll today, snow is melting, sun is shining, Spring is waking.  So I opened the windows to let her in, curtains all aflutter on the breeze, turned up the radio, and made this.

Sweet Peachy Mango Smoothie

Peachy mango smoothie

  • 1 bag (10 oz.) frozen organic peaches
  • 1 bag (10 oz.) frozen organic mango
  • 1 or 2 bananas
  • 1 cup coconut milk
  • ¼ cup 100% maple syrup

Let the frozen fruit defrost slightly, then add all ingredients to your blender, and blend.  Garnish with blueberries, strawberries, or any fresh fruit you have on hand.  To make your little ones happy, pour some of this smoothie into Groovy Pop molds (BPA-free, Tovolo) and freeze for a few hours.

This is loaded with anti-oxidants, vitamins A and C.   It’s great as a breakfast drink, with lunch, as an after-school snack, or anytime in between.

So simple, so sweet.

    There are not enough meals in a day to eat all the good food on this blog. I can’t wait until I can be off of my crutches to make all this yummy food!
